Day 233: culinary sage

It’s easy to overdo the sage in your cooking; less so in the garden. A walk along the borders at Great Comp should convince anyone that there will always be room to squeeze in one more ornamental salvia, but the culinary varieties, while less numerous, make an equally valuable contribution with their attractive and tactile foliage. This is Salvia officinalis ‘Icterina’ and, while it’s known as the golden sage, the dappled shade just beyond my kitchen door tends to keep the lighter areas of the leaves pale green, rather than a stronger yellow. It doesn’t seem to affect the taste. As with all culinary sages this is quick to get leggy, but thankfully simplicity itself to grow from cuttings.
